12:45

I've got an appointment to see my doctor today at 12:45! Initially, she was going to schedule me for Monday, but I asked if there wasn't anything sooner and she "found" this spot.

I'm glad because this means I won't have to suffer all weekend (if he gives me Ativan or something that acts quickly...). But no matter what, it means I'm on the way to feeling better. Yay!

In other news, I am in such a rut for dinner ideas. I know my family is burned out on everything, too.

I went to the Kraft recipes website and found this:

Easy Beef and Broccoli

Prep Time:5 min
Total Time:15 min
Makes:4 servings, 1-3/4 cups each

2 cups instant white rice, uncooked
1 Tbsp. oil
1 lb. beef stir-fry strips
2 cups frozen broccoli florets
1/4 cup hoisin sauce
1/4 cup KRAFT CATALINA Dressing
1 Tbsp. grated gingerroot

COOK rice as directed on package. Meanwhile, heat oil in large nonstick skillet on medium-high heat. Add meat; cook 3 min. or until evenly browned, stirring frequently.

ADD broccoli, hoisin sauce, dressing and gingerroot; stir. Cover. Cook 5 min. or until heated through.

SERVE over the rice.

Kraft Kitchens Tips
Substitute
If you can't find beef stir-fry strips in your supermarket, you can use any grilling steak, cut into thin strips, instead.

Make it Easy
Substitute jarred minced ginger for the grated gingerroot.

I bought top round steaks and cut them into strips and I also used regular long cook rice (cause that's what I had on-hand) and I used the garlic instead of ginger.

Sissy, who doesn't like anything, obviously, wouldn't even try it. But, the other three of us really enjoyed it.

I'll be making it again in the future.

  1. Good luck at the doctor's office and dinner sounds pretty darn good. I personally need to see which of my pizza suppliers is willing to work the 4th to keep my dinners on schedule.

    BB - Yes! He prescribed Buspar and Ativan, went to Kroger and got them filled and am now back home in AC comfort.

    Also? I'd recommend using the gingerroot. WOuld make the the dish taste TOTALLY different, I bet. Equally as good, but different.

    I've been on an Indian cooking jag here, and it's caught on so every other Wednesday is Indian night.

    I'll post the favorites if you want - the leftovers alone are worth it, and even the picky eaters love it.
