Monday Blahs

Yeah, it hasn't been a stellar Monday morning for me. It's colder than a witches teat here and I can't seem to get my thoughts together. I have lots of little picky-uny things that need to be taken care of (and yes, I'm ending that sentence with a preposition because I am just that lackadaisical this morning.)

My slacker tendencies aside, I stuck with my guns over the weekend and planned Crock Pot Sunday.

We had quite a bit of snow here on Saturday morning and it continued to snow during the day, so instead of going out for our special Saturday treat, I whipped up some meatballs and made spaghetti and garlic bread.

I had searched the interwebs last weekend to find a crock pot recipe with ingredients I felt the entire family would be likely to eat.

I found a recipe for "Creamy Chicken and Veggies". It's actually a very easy recipe because there are lots of options.

Basically, choose your favorite veggies: in my case I used baby carrots, red new potatoes and some onion.

Then, decide on the kind of chicken you want to use: legs, wings, etc. I used boneless skinless chicken breast.

After that, choose a "cream of" soup. I picked cream of mushroom. Alternately, you could use the "Simmer Sauces" made for stir fry, but I couldn't find any of those.

You put in the veggies, layer the chicken on top (I had 4 pieces), then put the "cream of" soup on.

Optionally, you can add garlic or ginger. I threw in about a teaspoon of minced garlic and towards the end, I added salt, pepper and paprika (just sprinkled a bit over top).

Do not add water, the slow cooking will retain enough fluid.

Put the lid on and that's it! Cook for 3-4 hours on high or 6-8 on low.

Now, I must say that this dish didn't look very appealing at serving time, but it was very tasty and it will be put into the rotation of crock pot meals.

  3. YUM!!! I'm totally jealous - after a weekend full of remodeling projects, I ordered Domino's... Would have been much better to go to the crock for a hunk of chicken!!!

    I'm running ever day in a long sleeves shirt and maybe a hoodie, in Feb. In Canada!

    And you're getting the white stuff?

  9. I think lack of sleep is contributing to my Monday Blah's.

    I would have used the mushroom too. For some reason it's the best...and I don't like mushrooms.

  11. Oooh, I have a recipe you might like for ten-can soup. You pretty much just dump a whole bunch of different things into a pot and add browned ground beef. It's perfect for winter. I'll have to find it and send it to you through email or something.

    Oh - and you ended that first sentence with a noun, so no worries! Besides, I'm actively making myself get over that rule - it's increasingly considered outdated, and even the most recent Chicago Manual of Style has decided it's basically okay.
